    Slow simmered Boston butt pork with garlic and Creole seasoning. Potatoes, onions and carrots.

    Fresh French bread (sesame and caraway seed).

    A big tall glass of fresh milk.

    A nice night for this comfort food, 1/4” of sense and temps below freezing. While house had that slow simmered meat smell!

    You just cannot beat a crockpot and freezer combination for making main meal items.

    Eat it hot on day one and freeze 2/3rds of the remainder. Eat the rest for lunch/supper that week.

    Really a handy way to come home to a hot home made meal.

    The new crockpots are just awesome, though the non computer controlled units are great as well.

    It’s my Fall/Winter/Early Spring go to.

    Bring chili, soup, pot roast, BBQ, etc out of the freezer for a change of pace whenever you are in the mood.

    The crockpot is probably the EASIEST cooking device that provides some of the BEST Meals that “almost” ANYONE can cook.

    That probably explains why so many women can’t even figure that out.

    So many LAZY stay at HOME Bitches can’t even throw together a few easy meals a week together in a crockpot.

    Beef or Chicken or Pork and Potatoes/Carrots

    Pork loin in mushroom sauce

    Beef Stew

    HEARTY Chicken Soup

    Barbecue chicken wings

    Chili

    ETC. ETC. ETC.

    The origional stock pot is where the crock pot got it’s start from, food wasn’t thrown away back then, it was always put in the stock pot over the fireplace where bacteria wouldn’t devour it. Don’t ask me what it tastes like I’m not 180 year old, they were made of cast iron and hung close to the fire.

    Now we went in the other direction with modern refrigeration.

    Just put the remains of the meal away, pulled the plastic/disposable liner and threw it away, washed the ceramic inner liner and am through with supper….. with meals remaining thru Tuesday.

    I fondly remember camp pots during hunting/camping trips as a kid. Dad always had something good bubbling in there ready to be eaten 24/7 if you were hungry. Good times and great memories.

    Count me in brother! I have a restaurant kitchen in my garage on caster wheels!

    Grill with searing torch

    Big-ass 32 qt stock pot with appropriate big-ass burner

    Industrial stainless steel electric tray steamer

    and a fry’o’lator awaiting restoration.

    Not to mention the food processing trailer I plan on constructing for everything from boiling down tomatoes, canning fruit and vegetables and slaughtering, all on site with outdoor hose me down cleanup. all stainless steel restiraunt equipment awaiting construction and fabrication. I have a friend that also produces an abundance of vegetables that likes the idea of mobile processing trailer.

    I’ve taken home grown food to a whole new level around here!

    Very soon it’s time to slaughter the turkeys, I’m gonna start weighing them and retrieving a chest freezer.

    Oh yea! Eating GOOD!

    My food is much more nutritious! I make the food that feeds the plants that feed me! I know what I’m doing!

    Thanks Awakened! It’s allot of hard WORK! Nice thing is the acquisitions are behind me as more and more pieces of the puzzle come together, like the tractors needed for snow removal and brush cutting, otherwise labor intensive!

    It’s the main reason I bought equipment like leave vac trailer and 13hp leave blower, I move thousands of lbs of leaves, pine cones, pine needles, and forest debris, from this area and the road for drainage, without ever taking a step or holding a rake! Otherwise it’s my vehicles that suffer from lack of road maintenance. Spinning tires, slinging mud, making ruts, slapping branches, and bashing potholes destroys any vehicle!

    NOT MINE!

    This place is f~~~ed!

    9 hours of simmering.
    froze 3 quarts for future use and ate like a KING tonight.
    i got lunch/dinner for two days ready,
    and cost very little compared to take out.
    and the quality is FAR superior.
    .
    i swear we need a cooking forum here.
    i could talk food all day…

    Having a base to build on is half the battle and can make meal prep a snap.

    I am with you, there are many containers of sauce, pesto and the like in the freezer just waiting on the chance to make a meal happen.

    It’s just too easy to make extra and put it back for the frenetic days to come.

    You post the recipes Hitman and I will act as a willing test kitchen!

    Guess it’s time to start the regional comfort food thread back up.

    I’ve never used a crockpot, though I have heard good things about them. When I cook, I enjoy the process of cooking, for the process itself; sometimes more than the food.

    Tonight I’m making carne asada quesadillas with a twist.

    Marinated carne asada with a very healthy portion of sea salt and freshly ground black pepper marinated in olive oil with a slice of butter; seared on both sides and moist inside.

    Several thinly sliced pieces of high quality colby pepper jack cheese, placed inside of flour tortillas which are grilled until golden and crispy brown on their exterior.

    Red onion, green onion, and slices of radish are sautéed in olive oil, butter, sea salt, and a hint of black pepper until the onion loses it’s acidic flavor, then worcestoir sauce is dashed over until it thickens and glazes. Both types of onions are sprinkled over tortillas of the quesadillas, the radishes , which have a bitter flavor yet sweet marinate, are a garnish which serves as a contrast in flavors.

    But, the creme de la creme, is this twist:

    I pour a RICH barbecue sauce in a pan with a slice of butter, then add Sriracha for a kick. Stir it up and allow to warm and thicken. Then LIGHTLY drizzle over the top of the quesadilla (just a couple lines of it, as it is quite rich and would be overwhelming otherwise).

    Garnish with guac and sour cream…

    F~~~ing out of of this world delicious.

    I have best luck using small boneless pork roast .. about two pounds with chopped .. potatoes, carrots, celery and onions along with some kind of seasoning packet in about half cup of water for eight hours on low heat. For some reason, I usually enjoy a side dish of jello along with some grapes and some french bread \ with my slow cooker meal. I’ve also started using crock-pot plastic disposable liners since it make cleaning up so much quicker with no scrubbing or difficult washing other than a quick rinse and wipe dry.
